    Thai Shrimp-and-Pasta Salad

    Here's another one of my favorite recipes. It's good for either lunch or dinner.

    Ingredients

    • DoleClassicRomaineLettuce2 ounces uncooked linguine

    • 1 pound medium shrimp, cooked and peeled

    • 1 bag Dole Classic Romaine Salad Mix

    • 2 tablespoons chopped unsalted, dry-roasted peanuts

    • 1/4 cup lime juice

    • 2 tablespoons fish sauce

    • 6 chopped green onions

    • 2 1/2 teaspoons Splenda

    • 2 teaspoons vegetable oil

    • 1 teaspoon grated peeled fresh ginger

    • 2 garlic cloves, minced

    Preparation
    Do not break pasta in half (it makes it too hard to get onto your fork after the slippery dressing is added).
    Cook pasta in boiling water 9-1/2 minutes. Drain, and cool.
    Combine pasta, shrimp, lettuce, and peanuts in a large bowl; toss well.

    Combine lime juice and remaining ingredients and mix well. Pour over pasta mixture, tossing gently to coat.

    Yield: 2 servings

    Ham, Green Beans and Potatoes Recipe

    Another satisfying dinner tonight.  A big pot of ham, green beans and potatoes and next to no calories!

    Here's how it's done.

    • Cumberland Gap Ham - chunked
    • Lots of Fresh Green Beans
    • Lipton's Onion Soup Mix
    • Small White or Red Potatoes

    GreenBeans  -- Clean the potatoes and beans.  Fill a large pot half full of water and add the onion soup mix.  Then, add in the ham, potatoes and green beans.  Boil on medium heat for an hour or so.

      -- If you're on Weight Watchers, the green beans are freebies... fill up on them.  Scoop out the potatoes and weigh them.  3-oz = 1 point.  Consult your ham's nutritional sticker for fat/calories/fiber.  I use Cumberland Gap Ham and you can have 2 ounces for 1 point.

    Strawberry Shortcake Recipe

     

    StrawberryShortcakeWow... day two of my diet and I'm still happy and satisfied.

    As I type this, I'm enjoying this yummy treat. 

    I cut up the strawberries last night and put them in a Zip Lock bag with some Splenda. 

     

    I added 1-1/2 cups of Strawberries over 1/8 of an Angle Food Cake.  And, added two heaping tablespoons of Cool Whip Free.

    Including licking the Cool Whip that stuck to the measuring spoon, this delicious dessert only adds up to 4 Weight Watchers points.
